How can every eye see Jesus at His coming if the Earth is a sphere?

The “every eye will see him” phrase is found in this part of the Bible:

Revelation 1:7
Behold, he [Jesus] is coming with the clouds, and ‘every eye will see him,’ even those who pierced him, and all tribes of the earth will wail on account of him. Even so. Amen.

The reason why everyone around the world will see Him is found here:

Matthew 24:29-30
Immediately after the tribulation of those days the sun will be darkened, and the moon will not give its light; the stars will fall from heaven, and the powers of the heavens will be shaken.
Then the sign of the Son of Man will appear in heaven, and then all the tribes of the earth will mourn, and they will see the Son of Man coming on the clouds of heaven with power and great glory.

Observation #1: Note that the entire sky around the world will be dark.

Matthew 24:26-27
Therefore if they say to you, ‘Look, He is in the desert!’ do not go out; or ‘Look, He is in the inner rooms!’ do not believe it.
For as the lightning comes from the east and flashes to the west, so also will the coming of the Son of Man be.

Observation #2: Note that Jesus will be shining bright like lightning.

Fuller explanation:

Every eye will see Jesus because the sun and moon will go dark (perhaps because of smoke rising from the earth, or supernaturally by God), so that when Christ comes, He will circle the earth with lightning-like brilliance that pierces the darkness. That brilliant shining is the “sign of the Son of Man.” As lightning stands out against the night sky, so Jesus’ appearing could not be missed anywhere on earth.

This part of the above Revelation verse: “all tribes of the earth will wail on account of him” is expanded on in Revelation 6:12-17. Look it up. It has details from the Matthew 24 verses I quoted.
